Banana Pancakes for Everyone


Perfect fluffy, naturally sweet banana oat pancakes for any occasion. Everyone loves them!

 Servings: 8-10 pancakes


-1 cup (90 g) oatmeal or oat flour*

-2 ripped bananas

-½ cup (125 ml) coconut milk or milk of your choice (almond milk or soy milk works also fine)

-2 organic eggs (or substitute for 2 tablespoons ground flaxseeds + 6 tablespoons of water)

-½ teaspoon baking soda or tartar baking powder

-Pinch of Himalayan salt

-Pinch of cinnamon (optional)


-Mix all ingredients in a bowl and blend (feel free to add more liquid if desired).

-Let the mixture sit in the fridge for at least 10 min (optional but recommended).

-Heat up a non-stick pan over medium-high and spray a little bit of Lucy Coconut Baking Spray. Once the pan is hot, lower the heat to medium-low and pour a big spoonful of the mixture at a time. Cook until small bubbles form and the pancakes look dry around the edges then flip and cook on the other side until golden brown. If the pancakes brown before the middle is cooked through, try lowering your heat a bit.

-Top with your favourite pancake toppings. Ours are red fruits and Nux Just Peanuts!


*For a traditional pancake texture we recommend using oat flour instead of oatmeal. Brown rice flour works quite well in this recipe too.
