Easy and Quick Miso Soup

Ingredients (2 to 3 servings):
-800-900 ml water
-Spinach or kale (a couple of big handfuls)
-Small spicy red pepper, sliced
-Fresh ginger, grated (optional)
-2 salmon fillets cut in cubes (replaced by 2 boiled eggs if vegetarian or tofu if vegan)
-Half a package of Terrasana Buckwheat & Sweet Potato Noodles
-1 heaped teaspoon Il Nutrimento Veggie Stock
-1 heaped tablespoon (to taste) Clearspring Brown Rice Miso
-Cook noodles following instructions on the package. Drain, rinse with cold water (so that noodles don’t stick to each other) and set aside.
-Heat up the water in a pot. Add a heaped teaspoon of Il Nutrimento veggie stock.
-Slice the red pepper and cut the salmon into cubes. Grate a small piece of ginger (1 cm, or more if you love ginger!).
-When the water is boiling, add the salmon, ginger and pepper and lower the heat to medium. After 2 min, add the spinach or kale and let it simmer for another 10 min. Remove the pot from the heat and let it cool down for 5 min. It’s important that you don’t add the miso while the soup is boiling as that would kill the good bacteria. After 5 min, add a tablespoon of brown rice miso and stir well. (Feel free to add more for a stronger taste).
